Cucurbitacin E is a highly oxidated steroid consisting of a tetracyclic triterpene. Cucurbitacin E is known to possess broad spectrum of potential anti-inflammatory, antitumor andantioxidant effects. In the wild, watermelons, cucumbers, and muskmelons produce bitter Cucurbitacins to defend against preditors.
